Herb Cheese Spread



1 (8 ounce) package organic cream cheese, softened
½ cup organic butter, softened
1 tablespoon half and half
1 tablespoon chopped dill
1 tablespoon chopped chives
1 tablespoon chopped Italian parsley
1 teaspoon minced garlic

In large mixing bowl, combine cream cheese, butter and half & half. Using an electric mixer, beat on medium-high until light and fluffy.

"Fluffy" is, in this case, more of a visual descriptor than a textural one.


Add herbs and garlic; salt and pepper to taste. Continue mixing until well combined.
Refrigerate, covered, several hours.

I think mine was only in there for about an hour and it came out just fine.



My Rating: 3/5 "The flavor of this is pleasant, but it's really... I dunno. Stiff. It's supposed to be a spread, but it can't imagine spreading it on a cracker because it was all I could do to ram a celery stick in there. I think the trick might be to incorporate less butter, because once you put the butter back in the fridge (for hours) it tries to revert to its former stick form instead of staying malleable with the cream cheese."
