Stuffed Chicken Breasts Wrapped in Bacon



6 (6 ounce) boneless, skinless chicken breasts
1 (8 ounce) package Neufchatel cheese, softened
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh chives
1 tablespoon chopped garlic
12 bacon slices, partially cooked
Toothpicks

Pound chicken breasts to ¼-inch thick; set aside.

In medium bowl, combine Neufchatel, herbs and garlic; salt and pepper to taste.

Divide cheese mixture evenly among chicken breasts. Roll-up chicken tucking in ends. Wrap each breast in 2 slices of bacon. Secure with toothpicks. Place in a greased 13x9-inch baking dish.

Ah, bacon-wrapped stuff. Very fancy!


Bake in a preheated 400F oven 35 minutes or until chicken reaches 170F and juices run clear.

My Rating: 4/5 "Delicious creamy goodness in here. If you're into combinations of meats, this will make you really happy. I could have handled more punch in the herbs - what's here is pleasant, but it doesn't add a lot to the overall cream cheese-y flavor. But this is still a treat!"
