Broccoli & Pea Guacamole


2 cups frozen chopped broccoli, thawed
1 cup frozen green peas, thawed
1 ripe avocado, peeled, pitted and chopped
1/2 cup plain Greek yogurt
1/2 cup thick 'n' chunky salsa
1/4 cup chopped fresh cilantro
1 teaspoon chopped garlic
Juice of 1 lime
Tortilla chips

In food processor or blender, combine broccoli and peas; process until finely chopped.

Add remaining ingredients except tortilla chips; process to desired consistency.

This takes a little effort to get all blended.

But once it happens it's a sight to behold!


Salt and pepper to taste.

Serve with tortilla chips.

It's fluffy, right?


My Rating: 3/5 "The addition of broccoli and peas makes for a unique guacamole. Unfortunately part of that uniqueness is that it's really bland - I'd use an extra-spicy salsa for this if you want to give it some punch. Conversely, the consistency is pleasantly light and airy, which makes it kind of fun. Give it a shot and get your daily dose of cruciferous vegetables!"
