Lime Chicken Tacos


Daktronics Employee Cookbook, p. 118

1 ½ lbs. boneless, skinless chicken breasts
3 T. lime juice
1 T. chili powder
1 c. frozen corn
1 c. chunky salsa

Place chicken in 3-qt. slow cooker. Combine lime juice and chili powder; pour over chicken. 

That's a nice burst of flavor!


Cover and cook on low for 5-6 hours or until chicken is tender. Remove chicken; cool slightly. Shred and return to slow cooker. 

The chicken is incredibly tender after being in the slow cooker so long and it shreds magnificently.


Stir in corn and salsa. Cover and cook on low for 30 minutes or until heated through. Serve in tortillas with sour cream, cheese, and lettuce if desired.

Nice cool toppings to round out the dish.



My Rating: 4/5 "What an interesting combination of flavors! You don't actually taste much lime in the end result of the chicken, but the salsa gives it pop with a sweet counterpoint from the corn. The toppings make sure you don't get overwhelmed if you're the kind of person who doesn't like spicy food. (I used corn tortillas for health reasons, but flour might make the texture even nicer.) All in all, it's a nice comfort dish."
