Vanilla Rice Pudding



1 egg
1 qt. (4 cups) milk
1 pkg. (4.6 oz.) vanilla flavor cook & serve pudding
1 cup instant white rice, uncooked
¼ cup raisins
¼ tsp. ground cinnamon
1/8 tsp. ground nutmeg

BEAT egg and milk with whisk in large saucepan until blended. Add dry pudding mix; beat 2 min.

Stir in rice and raisins. BRING to full rolling boil on medium heat, stirring constantly. Cool 5 min., stirring occasionally. Pour into 12 dessert dishes or 1-1/2-qt. serving bowl. SPRINKLE with spices. 

I'm not very good at sprinkling.


Serve warm. Or, cover and refrigerate until ready to serve.

My Rating: 5/5 "LOVED this. I love rice pudding in general, but the happy vanilla-y flavor of this one, especially with the autumn spices and sweet burst of the raisins, was utterly wonderful. It's easy to keep this low-sugar, too if you use sugar-free pudding. So score there too!"
