Corn Macque Choux

Cajun Flavors from Home Family Cookbook, p. 43

2 cans whole kernel corn, drained

1 can cream style corn

1 can diced tomatoes with green chilies (mild)

1 lg. onion, chopped

½ stick butter

½ bell pepper, chopped

Salt to taste

Saute the onion and bell pepper in butter. 

I would have gotten more contrast with a green pepper. Food for thought.

Add diced tomatoes and cook 15 minutes and add corn. 

So much juicy goodness!

Simmer for 10 to 15 minutes and serve.

Served with a barbeque chicken kebab and some of our dinner guest's utterly delicious vegetable curry.

My Rating: 4/5 "This is so refreshing! It's not the most sophisticated version of this dish in teh world, but the sweet and hot elements are excellent counterpoints to each other so it's tasty and memorable. A good side for something savory, and a good kick of Louisiana flavor!"
