Crunchy Maple Nut Granola

Bob’s Red Mill

3 cups Rolled Oats

1 cup Shredded Coconut

1 cup Sliced Almonds

1 cup Chopped Pecans

¼ cup Brown Sugar

1 tsp Cinnamon

¼ cup Maple Syrup

¼ cup Vegetable Oil

1 tsp Salt

1 cup Raisins

Preheat oven to 250F. In a large bowl, combine oats, coconut, nuts, brown sugar and cinnamon.

So many delicious things in one bowl!

In another bowl, combine the syrup, oil, and salt. Pour wet mixture over oat mixture and stir well. Spread evenly on large sheet pan and bake for 1 hour, stirring every 15 minutes.

The stirring part is kind of fun!

When done baking, transfer to a large bowl and mix in raisins.

The raisins are what really add the finishing touch, though.

I ate mine different ways: as a cereal in milk, and also just dry in a baggie I took to work for lunch. I recommend both approaches!

My Rating: 4/5 "This granola is quite satisfying. One bowl/baggie is very filling and gives you a great energy boost. I love oats, of course, so this kind of thing is right up my alley."
