Chilli-Lime Mayonnaise

Ratio, p. 173

2 teaspoons cumin seeds, toasted and finely ground

1 teaspoon coriander seeds, toasted and finely ground

1/8 teaspoon cayenne or ground chipotle powder

1 clove garlic, germ removed, finely minced or crushed or crushed to a paste

2 teaspoons fresh lime juice, or to taste

½ cup mayonnaise

1 tablespoon chopped cilantro

1 teaspoon minced jalapeno (optional)

Salt and freshly ground black pepper

Combine all the ingredients except the salt and pepper and season to taste with salt and pepper. 

I have to confess that I just used pre-ground spices. I wish I was cool enough to toast my own cumin seeds!


It’s best to make this at least an hour before you serve it to allow the spices to bloom.

Served on grilled chicken with some delicious lemon cucumber that one of Matt's curling buddies gave us.


My Rating: 5/5 "Wonderful stuff! It has incredible flavor, and yet it doesn't overwhelm whatever you put it on. The cookbook suggested that it was good with grilled meat, and it was right. (We also tried it on hot dogs, though, and that didn't go so well.) Wake up your taste buds!"
