Pecorino Romano Vinaigrette

Dole

2 Tbsp. white wine vinegar

2 Tbsp. balsamic vinegar

2 Tbsp. water

½ cup grated pecorino Romano cheese or Parmesan cheese

1 Tbsp. chopped fresh parsley

1 tsp. lemon juice

½ tsp. dry mustard

½ tsp dried minced garlic

¾ cup extra virgin olive oil

Salt and ground black pepper, to taste

Combine all ingredients except oil in blender container. 

You can SEE how multifaceted this flavor is!


Cover; blend at medium speed. Slowly add oil in thin stream, until blended. 

Here's where it gets really robust.


Season to taste.

Toss with lettuce blend to coat, as desired. Refrigerate any remaining dressing.

Give it a nice substantial drizzle. It's worth it.


My Rating: 4/5 "This flavor is so complex. I didn't think salad dressing could be this nuanced! But it is! The parsley gives it enough grounding that it's not overwhelmingly cheesy and this blend of vinegars complements the oil really well. Give it a shot!"
