Pistachio, Cranberry and White Chocolate Chip Oatmeal Cookies

½ cup butter, softened

½ cup packed brown sugar

½ cup granulated sugar

1 egg

1 teaspoon vanilla extract

1 ¼ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup pistachios

½ cup rolled oats

½ cup dried cranberries

½ cup white chocolate chips

If you can find those fancy pistachios that come pre-shelled, do yourself a huge favor and buy them. It takes so, so long to shell a whole half-cup of them.


Preheat oven to 350F. Lightly grease cookie sheets or line with parchment paper.

Combine butter, brown sugar, egg and vanilla in a large bowl; beat until light and fluffy. Mix in flour, baking soda and salt. Stir in pistachios, oats, cranberries, and chocolate chips. 

Look at all that wonderful texture!


Drop by rounded tablespoonfuls onto cookie sheets.

Bake in upper third of oven for 12-14 minutes or until lightly browned on edges. Use a spatula to remove from cookie sheets. Cool on wire racks.

Nicely compact little balls of flavor.
