Red Cabbage Salad

Aebleskiver and More: A Sampling of Danish Recipes, p. 56

SALAD DRESSING

1 cup whipping cream

Juice of 1 lemon

Salt to taste

1 tablespoon sugar

SALAD

1 medium-sized head red cabbage

1 large tart apple, pared and diced

3 ribs celery, cut into short pieces

Mix all dressing ingredients together and chill. Salad: Remove outer leaves of cabbage; core and shred, but not too fine. 

"Shred, but not too fine" is an anxiety-producing instruction. Did I get it right? Who knows!


Mix in the apple and celery. Stir in the dressing and chill until serving time.


This dressing is wonderful just by itself, FYI.




Served with some nice rotisserie chicken.


My Rating: 4/5 "Cabbage doesn't usually have a lot of wow factor, but in this case the nice shredded consistency of it combines well with the crisp, sweet apples and celery for something pretty damn special. (Not to mention the awesome dressing that unifies it all.) Plus red cabbage is so pretty when it's plated! There's still some bitter cabbage-y undertones, but overall the effect is just memorable and refreshing."
