Sweet Potato Pone

Addy’s Cookbook, p. 26

1-pound sweet potato

Butter to grease baking pan

¼ cup butter

1/3 cup brown sugar

1/3 cup maple or corn syrup

1/3 cup milk

2 eggs

½ teaspoon allspice

½ teaspoon cinnamon

¼ teaspoon cloves

¼ teaspoon ginger

½ cup chopped nuts

Heavy cream or ice cream (optional)

Wash the sweet potato and prick it with a fork. Then bake it in a 350F oven for an hour, or until a fork pierces it easily.

Remove the sweet potato from the oven. Set it aside until it’s cool enough to handle.

Keep the oven set at 350F. Grease a 9-inch round or square baking pan with butter.

Use a butter knife to peel the skin from the sweet potato. Cut the sweet potato into 4 pieces and put the in a mixing bowl. Discard the skin.

Mash the sweet potato until it is smooth. You should have about 1 cup of mashed sweet potato.

Mashing with an immersion blender FTW.


Melt ¼ cup of the butter in the saucepan over low heat. Then stir the butter into the mashed sweet potato.

Add the brown sugar, maple or corn syrup, and milk to the sweet potato mixture. Beat until the mixture is smooth.

Crack the eggs into a small bowl. Beat them with a fork until well mixed. Then stir them into the sweet potato mixture.

Stir in the allspice, cinnamon, cloves, and ginger. Then add the chopped nuts.

Spoon the sweet potato pone into the baking pan and bake for 1 hour. It is done when a knife inserted into the pone comes out clean.

Remove the sweet potato pone from the oven. 

And behold the transformation!


Serve it warm or cold. Serve it with cream or ice cream if you’d like.

Just plain cream is a solid choice.



My Rating: 4/5 "What a yummy fall dish! It's pretty light and not too rich (especially if you use the maple syrup instead of the corn syrup), but still hits you in a satisfying sweet spot. The slices are a little thin, but especially when you have the cream or ice cream as a side they're super fulfilling. I actually liked it better cold as a dessert, but if you had it hot it'd also be a solid side dish with something salty."
