White Chocolate-Macadamia Nut Cookies

Baker’s

3 pkg (4 oz. each) white chocolate, coarsely chopped, divided

1-3/4 cups flour

¾ tsp. baking soda

¼ tsp. salt

½ cup butter or margarine, softened

1/3 cup packed brown sugar

1 egg

1 tsp. vanilla

1 cup macadamias, coarsely chopped

HEAT oven to 375F. MICROWAVE 1 cup chocolate in small microwaveable bowl on HIGH 2 min. or until almost melted, stirring every 30 sec. Stir until completely melted. Combine flour, baking soda and salt. BEAT butter and sugar in large bowl with mixer until light and fluffy. Add egg and vanilla; mix well. Blend in melted chocolate. Gradually add flour mixture, mixing well after each addition. 

Beautifully smooth!


Stir in nuts and remaining chopped chocolate. DROP heaping tablespoons of dough, 2 inches apart, into 24 mounds on parchment-covered baking sheets. BAKE 8 to 10 min. or until lightly browned. Cool on baking sheets 1 min. Remove to wire racks to cool completely.

By the way, you should know going into this that macadamia nuts are a lil' pricey. To me the splurge was worth it, but I wish I'd know about it ahead of time.


My Rating: 4/5 "Have I mentioned that I adore white chocolate? And combinations of sweet and salty? These cookies are full of both of those flavors, and it's pretty damn wonderful. The only suggestion is have is that blending the white chocolate into the dough almost makes these TOO sweet - although richness is always a matter of taste. But in the end? Yum. Definite yum."
