Blackeye Pea Salsa

Essential Everyday

1 (15 ounce) can blackeye peas, rinsed and drained

1 (14.5 ounce) can diced tomatoes with green chiles, drained

¼ cup chopped onion

2 tablespoons fresh squeezed lime juice

2 tablespoons chopped fresh cilantro

½ teaspoon chopped garlic

½ teaspoon ground cumin

In medium mixing bowl, combine all ingredients; salt and pepper to taste.

What a happy combination!


Serve with tortilla chips.

My Rating: 4/5 "I made this for New Year's for good luck, and if luck tastes this good then you can be confident it's going to work! There's just enough tartness to keep this interesting, but you still get an earthy undertone from the blackeyes. You feel like a million bucks after you eat it, too!"
