Mexican Hamburger Casserole

Favorite Recipes of the Great Plains, p. 100

1 lb. ground beef

2 T. margarine

½ c. onion, chopped

1 t. garlic, minced

1 T. paprika

1 t. oregano

1/3 c. wine (opt.)

1/3 c. Cheddar cheese, grated

Dash of pepper

4 c. kidney beans

1 c. tomato sauce

¾ c. crushed corn chips

Brown meat and place into 2-quart casserole. Melt margarine, add onion and garlic. Saute until onion is clear. Add spices, beans, tomato sauce, corn chips and wine. 

The corn chips add absolutely no texture or flavor to this and I have no idea why they're in the recipe.


Mix and spoon over meat. 

Thick layers, tho.


Sprinkle with cheese. Bake at 350 degrees for 30 minutes or until mixture is bubbly.

A nice amount of cheese - enough for flavor, but not too much.

My Rating: 3/5 "This is... well first of all, there's nothing Mexican about it. The spices are more Italian, and the overall flavor is pretty much just generic Midwest beef casserole. It's very filling, in the end, but it's an odd combination of things."
