Newcastle Praline Cookies

Wyoming Cookin,’ p. 41

1 cup light brown sugar

1 tbsp. flour

1/3 tsp. salt

1 egg white, beaten

1 tsp. vanilla

2 cups pecans

Mix sugar, flour, and salt. Put through colander. Add beaten egg white, vanilla and pecans.

Looking familiar!

Drop by teaspoons on cookie sheet heavily greased with shortening.

Pre-baking: Nice cohesive little cookie doops.

Bake at 275F for 35 minutes. Remove from cookie sheet before cookies are cold.

...but "mind the gap, 'cause these babies expand."

My Rating: 4/5 "Of course these are going to be tasty - they're pretty much nothing but sugar! I wish they kept their shape a little better. I think more flour/eggs might help with that, but then I suppose they wouldn't be as sweet. If you're coming into this expecting actual pralines you'll probably be disappointed, but if you want a nice crunchy cookie they really hit the spot!"
