Skillet Chicken and Noodles

2 Tbs. margarine

½ cup diced onions

½ cup small diced celery

3 cups (24 oz.) fat free chicken broth

½ tsp. salt

1/8 tsp. pepper

¼ cup flour

1 cup milk

1 egg

2 cups cooked chicken

2 cups cooked wide noodles

1 cup frozen peas and carrots, partially thawed

I chopped up some rotisserie chicken. Good stuff.


In a large skillet over MEDIUM-HIGH heat, MELT margarine and cook onion and celery 3 minutes, until onion is transparent. ADD broth, salt and pepper and bring to a boil. Meanwhile, place flour in a small bowl and gradually STIR IN milk, mixing thoroughly, then stir in egg, mix well, set aside. When broth boils, ADD in cooked chicken and noodles, return to a boil. 

It'd probably be pretty good like this, even without the thickener.


Gradually STIR IN flour mixture to thicken and bring to a boil. ADD partially thawed peas and carrots and stir gently, heating thoroughly. Serve hot.

My Rating: 3/5 "I mean, don't get me wrong: I like comfy food. But this is really bland. Even with the veggies it's bland. The texture is nice, and by no means is this an unpleasant thing to eat. It's just... bland."
