1905 Salad

Music and Food of Spain, p. 60

GARLIC VINAIGRETTE

¼ cup white wine vinegar

1 cup olive oil

8 garlic cloves, minced

1 teaspoon minced fresh oregano

2 teaspoons Worcestershire sauce

Salt and pepper to taste

1 head iceburg lettuce

4 tomatoes, diced

6 ounces Swiss cheese, julienned (about 1 ½ cups)

6 ounces ham, julienned (about 1 ½ cups)

2/3 cup pitted olives, preferably Spanish

1 to 2 teaspoons grated Romano cheese

Juice of 1 lemon

In a small bowl, whisk all the vinaigrette ingredients together; set aside.

Look at all that beautiful garlic.

Chop the lettuce and place in a large bowl. Add the tomatoes, Swiss cheese, ham, and Spanish olives.

Shoutout to my mom for doing a much better job than I would have done julienning the ham and cheese.

Pour the garlic vinaigrette over and add the romano cheese and lemon juice. Toss all the ingredients together and serve the salad on chilled plates.

All tossed!

Served with some roast pork loin.

My Rating: 4/5 "Loved what a substantial salad this is. It's quite filling all on its own, thanks to the meat and cheese. The dressing is also on point - very snappy! Actually the dressing MIGHT have been a TITCH too garlicky (and I say that with great reluctance because garlic is one of my favorite things in the whole entire world), but it sure wakes you up!"
