Favorite Cornbread

The County Fair Cookbook, p. 86

¾ cup yellow cornmeal

1 ¼ cups sifted flour

1 tablespoon baking powder

½ teaspoon salt

¼ cup sugar

2 eggs, beaten

1 cup heavy cream

Preheat the oven to 425 degrees F.

Sift or whisk the dry ingredients together. Add the eggs and cream. 

So simple. So delicious.


Beat hard until smooth. Pour into a greased 9 x 9-inch pan. Bake about 25 minutes, until firm.

Done!
