Pea Salad

Best Choice

1 can (15 oz) sweet peas, drained

2 hard-cooked eggs, chopped

½ green pepper, chopped

½ cup chopped onion

¼ cup diced American cheese

3 tbsp. mayonnaise

3 slices bacon, crumbled

¼ tsp. pepper

Combine peas, eggs, green pepper, onion and cheese in a serving dish.

I used a mild cheddar instead of American cheese. Same basic flavor, better consistency.

Fold in mayonnaise.

Season with pepper and top with bacon.

Gobble gobble turkey bacon!

Chill several hours before serving.

We grilled out and ate inside. But since there was a mayo-based salad we can still call it a cookout!

My Rating: 3/5 "So full disclosure: I don't generally like peas. I'm turned off by both the flavor and the texture. Now this did a little bit to improve my general opinion - the mayo and bacon covered up the pea flavor nicely, at least. But the texture was still there. I mean basically if you like canned peas you'll like this. If you don't, maybe find another side dish for your cookout."
