Southwest Chef's Salad with Shells

Creamette

½ package (8 oz.) medium shells, uncooked

1 ¼ cups mayonnaise or salad dressing

1 can (4 oz.) chopped green chilies, drained

¼ cup green onions, chopped

1 tsp chili powder

½ cup carrot, shredded

½ cup celery, chopped

Lettuce leaves

½ lb. cooked turkey breast, sliced, cut into strips

½ lb. cooked ham, sliced, cut into strips

½ lb. Monterey Jack or Swiss cheese, cut in strips

Tortilla chips

Happy crunchy food!


Cook pasta according to package directions. In large bowl, combine pasta, mayonnaise, chilies, onions, chili powder, carrots and celery; mix well. 

This would probably be a good pasta salad by itself even if you didn't add all the fixins.


Spoon into a lettuce-lined serving bowl; top with turkey, ham and cheese. Cover; chill thoroughly. Serve with chips.

Why chips? I'm not sure, but they did taste good with it.


 My Rating: 3/5 "This was an usual pasta salad. I liked the flavor - the chilies and the mayo are a good combination. I wasn't sure why there was so much meat and cheese on top, though. Half the amount would have sufficed and would have been a lot easier to eat. Still, it's unique and flavorful, so props for that."
