Sweet Pepper Nacho Bites

The Keto Reset Diet, p. 289

12 mini sweet peppers (approximately 8 ounces, 230 g)

½ cup (45 g) shredded Monterey jack cheese

½ cup (120 ml) guacamole

Juice of 1 lime

Preheat the oven to 400F (200C).

Carefully cut each pepper in half lengthwise and remove the seeds. Place them cut side up on a rimmed baking sheet so they aren’t touching. 

Pretty pretty peppers!


Place 1 teaspoon of shredded cheese inside each. 

Now it's a party!


Bake 3 to 5 minutes, until the cheese starts to melt.

Remove from the oven and top each with 1 teaspoon of guacamole. Squeeze the lime juice over top. Serve immediately.

All wrapped up after an evening of being enjoyed!
