Vegetable Rice Pilaf

1 tablespoon olive oil

1 small onion, diced

1 carrot, diced

1 stalk celery, diced

2 cups long-grain white rice

1 small red bell pepper diced

1 clove garlic, minced

½ teaspoon dried Italian seasoning

3 cups vegetable broth

1 small zucchini, diced

½ cup Italian parsley, chopped

In a large sauce pan with a lid, heat olive oil over medium heat and cook the onion, carrot, and celery until slightly softened, about 3-4 minutes. 

Pretty pretty bunny food!

Add the rice and cook while stirring constantly an additional 3 minutes. Add the bell pepper and garlic and cook two minutes more. Increase heat to high and add the Italian seasoning, vegetable broth and zucchini and bring to a boil. Lower heat, cover and allow to simmer for 15 minutes over low heat. 

Gonna get so fluffy!


Turn off the stove and let sit for an additional 10 minutes. Fluff with a fork and serve with the chopped parsley.

This makes quite a bit.

Served with some nice juicy rotisserie chicken.
