Pad Thai Noodles with Coconut Milk

2 tbsp stir-fry oil

1 shallot, chopped

2 garlic cloves, thinly sliced

1 tbsp ginger, minced

1 can organic coconut milk

1 tbsp turmeric

2 tbsp sriracha sauce

1 tsp fish sauce

Salt and pepper to taste

1 10.6 oz pkg Pad Thai express rice noodles

2 tsp cilantro, chopped

1 lime, sliced

1 tbsp lime juice

In large pot, heat oil, shallot, garlic and ginger, toss until fragrant. Stir in coconut milk, turmeric, sriracha sauce and fish sauce, bring to boil.

Add salt and pepper, simmer for 2 minutes.

Add Pad Thai noodles to pot; cook for 2 minutes, tossing gently.

Hooray for instant food!


Pour into large soup bowls, top with cilantro and add lime as garnish. Note: Squeeze lime juice before serving.

I'm getting more into garnishes these days. They add a lot.
