Pinto Bean Pie

Bush’s

1 unbaked 9” pie crust

1-1/2 c. sugar

1 c. margarine (melted)

1 Tsp. vanilla

¾ c. pinto beans (heated and lightly mashed)

1 c. finely chopped pecans

2 eggs, well beaten

¼ c. pinto bean juice reserved from can

Weird.


Drain the pinto beans saving 1/4th of the liquid to be used when combining the other ingredients.

Combine all ingredients and pour into unbaked pie shell.

Weirdddddddddddd.


Bake:

Regular oven: 350F for 45 minutes

Convection oven: 325F for 45 minutes

Center of pie will be slightly unset.

Can be frozen.

But beautiful!

My Rating: 4/5 "Proof that anything can be delicious if you put enough butter and sugar in it. This actually comes out with a nice texture and since it's beans instead of pure junk food you feel pretty good after eating it. Now can you still tell you're eating beans? Yeah, you can. But that's all part of the adventure, right?"
