Strawberry Applesauce Loaf

The Tasty Side of New England, p. 55

¼ lb. unsalted butter, softened

½ cup honey

2 eggs

2 cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

1 cup strawberry applesauce

¾ cup cheddar cheese, grated

½ cup walnut pieces

Preheat oven to 350F. Grease a 3x5x9-inch loaf pan. Cream the butter with the honey until light and fluffy. Add the eggs and beat well.

Sift together the flour, soda, and salt. Add sifted ingredients to the butter mixture and mix to moisten. Stir in the applesauce; then fold in the cheese and the nuts. 

Cheese in bread? Sign me up!


Turn into prepared loaf pan and bake 50-55 minutes. 

So satisfying to make a good-looking loaf of bread.


Remove from pan and cool on a rack.

My Rating: 4/5 "This is obviously a great combination of things. The natural sweeteners are nice without being overwhelming. It's a nice moist texture too with an edible crust. Hooray for bread!"
