Avocado Pie

Joys of Jell-O, p. 35

1 package (3 oz.) lime or lemon-lime gelatin

¼ teaspoon salt

1 cup boiling water

1 can (8 ¾ oz.) crushed pineapple

2 tablespoons lime juice

1 medium avocado, peeled and halved

1 package (3 oz.) cream cheese

1 cup whipped cream or prepared dessert topping

9-inch crumb crust

Dissolve gelatin and salt in boiling water. Drain pineapple, combining the syrup with lime juice; add cold water to make ¾ cup. Add to gelatin. Chill until very thick.

Meanwhile, dice half of the avocado. Mash the remaining half until smooth. Blend cheese into mashed avocado until creamy. Then fold cheese mixture, diced avocado, pineapple, and whipped cream or prepared dessert topping into thickened gelatin. Spoon into crust. Chill until firm. 

Firm but jiggly!


Garnish with drained pineapple slices or lime slices, if desired.

The pineapple ring idea seemed a little TOO mid-century. The limes fit in better with my milennial sensibilities.

My Rating: 4/5 "Stay with me - this is weird, but it isn't awful. If the avocado weren't in there it'd actually be pretty spectacular. With the avocado there's an unexpected twinge of, well, avocado, which doesn't quite seem to mesh with the other flavors. Once you get used to it things are ok, though."
