Banana Curry

Cooking the Caribbean Way, p. 64

2 oz. butter

2 small onions, chopped

1 dessert apple, peeled and diced

½ teaspoon salt

3 oz. sultanas

1 ½ oz. flour

2 teaspoons curry powder

½ pint milk

¼ pint water

4 bananas, peeled and chopped

4 hard-boiled eggs, quartered

Chutney

Boiled rice

Don't forget to make the eggs ahead of time!


The rest of the recipe can be done decently quickly in the moment, though.


Melt butter and fry onions until soft but not brown. Add apple, salt and sultanas previously run under boiling water. Sprinkle in flour and curry powder, stir and cook, stirring, for 3-4 minutes. Remove from heat and gradually stir in milk and water mixed. Return to heat and stir until thickened. Add bananas and cook gently for 7 minutes. 

This isn't a Food Network recipe; it's not vistually stunning, but it does taste good.


Add eggs to curry and continue cooking until eggs are heated. Serve with chutney and rice.

My Rating: 4/5 "I was a fan. It's definitely a fusion curry, so it's on the sweeter side of things. But apples and bananas and sultanas make a surprisingly great combination with the curry powder! The eggs are definitely 60s-tastic, but they do add nice variety of texture to everything. Overall? Yum!"
