Madelines (Magdalenki)

Treasured Polish Recipes for Americans, p. 149

8 egg yolks

1 cup sugar

1 ½ cups flour

½ cup butter

½ t salt

1 jigger rum

Beat eggs and sugar until lemon colored. Add flour and melted butter. Add rum.

A "jigger" is a 1.5 oz. shot.

Fill buttered small cup cake tins about one-fourth full. Sprinkle with sugar and slivered almonds. Bake in 350F oven for 15 minutes.

Quick and easy!

Since the almonds weren't in the actual ingredient list I didn't get any. But they were very good with just the sugar!

My Rating: 5/5 "Rave reviews all around. The rum adds a wonderfully rich element to these that makes them feel downright decadent. At the same time they're a ton easier to make than the frilly little madelines that require a special scallop-looking pan and whatnot. These are simple, robust, and delicious."
