Chilaquiles II

4 cups good tortilla chips

1 cup favorite red salsa, pureed until not chunky

5 eggs, scrambled & cooked until soft scramble eggs

½ cup shredded quesadilla cheese

1 avocado, diced

2 green onions, sliced

¼ cup cilantro, chopped

¼ cup Cotija cheese

½ cup sour cream

1 lime, cut into wedges

Happy green things.


Heat oven to 350F. Spread chips evenly on a sheet tray & place in oven until warm, about 5 minutes. Microwave salsa until warm.

In a large bowl, toss chips with salsa. Pour onto a large, warm, oven safe serving platter.

Weird thing to do, but the effect is nice.


Top chips with eggs and quesadilla cheese. 

Place chip platter under broiler in oven until cheese just melts.


So much variety of texture already!

Remove from oven & garnish with avocado, green onion, cilantro, and cotija cheese. Drizzle with sour cream and serve with lime wedges.

Served with a friend's delicious Mexican layer salad.

My Rating: 4/5 "There's so much going on here and it's all delicious. The visuals are appealing as well, which is a distinct plus. I think the traditional approach of using corn tortillas might have been an improvement on the salty chips, but everything still comes together nicely. Mexican food is more than tacos, y'all."
