Honey Ginger Grilled Salmon

1/3 cup orange juice

1/3 cup soy sauce

¼ cup honey

1 tsp. ground ginger

1 tsp. garlic powder

1 green onion, chopped

1 ½ lbs. salmon fillets

Mix orange juice and soy sauce, honey, ground ginger and garlic powder, and green onion, in glass dish. Add salmon; turn to coat. Refrigerate 15 min. Grill over medium-high heat 8 min. per side or until desired doneness.

I CHEATED and pan-fried these because I was worried that the honey in the marinade would be impossible to get off of the George Foreman. But the fillets came out very nicely anyway; they just didn't have as much of that smokey flavor.

Served with some nice leftover Avocado-Corn Salad.

My Rating: 4/5 "As usual the flavor of the cooked marinated meat isn't nearly as strong as that of the marinade itself. But it adds a pleasant little sheen of flavor to the already excellent taste of the salmon. Gotta love a pleasantly filling dinner!"
