Pecan Raisin Pineapple Sandwiches

Ruby Slippers Cookbook, p. 109

1 (8 ounce) package of cream cheese, softened

1 cup chopped pecans

1 cup chopped golden raisins

1 small can crushed pineapple, well drained and squeezed

1 loaf of sandwich bread

Mayonnaise

Chopping raisins was sticky and strange, but it gave the final product a nice texture.


Mix all ingredients and spread on sandwich bread that has first been spread with mayonnaise. 

Lay it on thick! It's delicious!


Trim off crust and cut into halves or quarters.

Fact: Sandwiches taste better when cut diagonally.


Note: Use scant cups so the mixture won’t be too thick.


My Rating: 4/5 "It's like ambrosia, but on a sandwich, which is a pretty good deal. I might speculate that I'd like it better by itself, actually, than on bread, but either way it's sweet and filling and memorable."
