Red Lentil, Tomato Yogurt Cream & Coriander Leaves

Pasta Lensi

1 pkg Red Lentil Fusilli

2 Cups Onion, Red

3 Tbsp. Butter

1 Tbsp. Garlic

1 Tbsp. Ginger

1 Cup Water

3 ½ Cups Tomato, Crushed

½ Cup Greek Yogurt, Plain

2 tsp. Honey

4 tsp. Salt

½ tsp. Black Pepper

**Garnish with additional Yogurt, Black Pepper and Coriander (Cilantro) leaves, to taste

Cook entire box of pasta according to package directions.

Dice onion and saute in butter (5-8 minutes).

So much red onion, but fortunately its flavor doesn't dominate the dish.


Mince garlic and ginger, add to onion when the onion starts to take on color.

Deglaze the pan with water, bring to a simmer and add tomato.

Add the yogurt, honey, salt, and black pepper.

Creamy sauce without cream!


Toss pasta with half the sauce.

Add more sauce on top of pasta.

Garnish and enjoy!**
