Spinach, Gorgonzola and Pine Nut Pizza

Bon Appetit Tastes of the World, p. 52

1 tablespoon olive oil

1 onion, sliced

2 garlic cloves, minced

1 10-ounce package frozen spinach leaves, thawed, drained well, squeezed dry

1 12-inch-diameter baked cheese pizza crust

1 tablespoon Garlic Oil

4 ounces Gorgonzola cheese, crumbled

3 ounces grated mozzarella cheese

¼ cup pine nuts (about 1 ounce)

Pepper

Heat oil in heavy large skillet over medium heat. Add oinion and saute until very tender and golden, about 10 minutes. Add garlic; saute 2 minutes. Add spinach to skillet and cook until liquid evaporates, separating spinach leaves with spoon, about 3 minutes. Cool. (Can be prepared 1 day ahead. Cover and chill.)

Preheat oven to 450F. Place crust on baking sheet. Brush crust with Garlic Oil.

Top with spinach mixture. Sprinkle Gorgonzola and mozzarella over spinach. Top with nuts. Season with pepper.

Bake pizza until crust is golden brown and cheese bubbles, about 15 minutes. 

Such thick toppings!


Transfer to cutting board. Cool 5 minutes. Cut into wedges and serve.

Well it's unique-looking, that's for sure.

My Rating: 3/5 "I had high hopes for this because it sounded Fancy. The toppings are tasty, but there's... there's just so much of them. They go on thick and are kind of overwhelming. The best part is the Gorgonzola, flavor-wise. Mostly everything else just adds texture and nutrition. Interesting, but not spectacular."
