Honey-Roasted Chicken and Butternut Squash

Favorite Brand Name Best-Loved Sweet Potato, Pumpkin, and Squash Recipes, p. 222

1 pound butternut squash, peeled and diced

Salt and black pepper

6 bone-in chicken thighs

1 tablespoon honey

Preheat oven to 375F. Spray baking sheet and wire rack with nonstick cooking spray.

Spread squash on prepared baking sheet; season with salt and pepper.

Squaaaaaash!


Place wire rack over squash; place chicken on rack. Season with salt and pepper.

Roast 25 minutes. Carefully lift rack and stir squash. Brush honey over chicken. 

It's not a lot of honey, but it helps the chicken look nice when it's done.


Roast 20 minutes or until chicken is cooked through (165F).

My Rating: 3/5 "This is nice, although I can't say it packs any fireworks. The chicken is nice and moist and the squash has a nice consistency as well. Neither of them are especially flavorful. In the end it just checks the box of being a nice healthy little dinner."
