Fig-Nut Loaf

Baking Classics

1-1/2 cups figs, dried or fresh, chopped

½ cup granulated sugar

½ cup honey

1 teaspoon baking soda

1 cup boiling water

2-1/2 cups flour

1-1/2 teaspoons salt

1 teaspoon baking powder

1 egg, beaten

1 teaspoon vanilla

½ cup walnut halves and pieces

1 tablespoon orange peel, grated

Figs, apparently.


Preheat oven to 325F. Combine figs, sugar, honey and baking soda in mixing bowl. Add water, stir, let cool. Sift together dry ingredients. Add remaining ingredients to the cooled fig mixture. Pour into greased 9” x 5” loaf pan. Bake for 1 hour 50 minutes. 

It's a pretty loaf!


Cool on rack. Wrap in foil and store overnight before slicing.

Then slice and enjoy!

My Rating: 3/5 "I like where this was going, but it didn't quite get there. It'd drier than I expected; I was thinking it'd be like strawberry bread or pumpkin bread, but it's more like regular bread with stuff in it. I also wasn't a fan of all the little fig seeds. But the overall flavor is pretty solid and it's an enjoyable accent to something else."
