20 Minute Chicken Parmesan

4 boneless skinless chicken breasts

1 egg, beaten

½ cup Italian seasoned breadcrumbs

¼ cup grated Parmesan cheese

½ cup shredded Mozzarella cheese

1 ¾ cups marinara sauce

2 tbsp unsalted butter

Mix breadcrumbs and Parmesan cheese. 

I worked some panko in there too to make the texture more interesting.


Dip chicken in egg and dredge in breadcrumb mix. 

Ready Freddy!


Saute chicken in butter until golden brown. Add marinara sauce, cover and simmer for 10 mins. 

Simmer simmer!


Sprinkle Mozzarella cheese over chicken, and cover for 2 min. until cheese is melted.

Served with some store-bought steamed Brussels sprouts.

My Rating: 4/5 "Gotta love tomato sauce and cheese. The chicken didn't get as tender as I might have liked, but the overall effect was still flavorful and nice. (For the record, it did take me a titch longer than 20 minutes to make this.)"
