Cole Slaw

Betty Crocker’s Cook Book for Boys and Girls, p. 168

½ medium head cabbage

1 medium onion, minced

2 tablespoons vinegar

¼ cup evaporated milk or heavy cream

¼ cup salad dressing

¼ teaspoon salt

½ teaspoon dry mustard

Shred cabbage on cutting board.

Chill in plastic bag in refrigerator to crisp.

A promising start.


Combine remaining ingredients in salad bowl. 

And then? A DELUGE of onions!


Add cabbage and toss together.

Sprinkle with paprika.

Since this was a retro cookbook I asked my mom if she did this to coleslaw when she was a kid. She said no, she thought that was a really weird thing to do.


Serve icy cold.

Served for our first cookout of the year with an ear of corn and a nice veggie brat.

My Rating: 3/5 "I'm giving this a 3 because I'm trying to be generous toward people who might like this. My dad, for example really liked this. My dad is also a huge fan of onions. The rest of us who ate it were like... this is way too much onion. So if you follow this recipe maybe do half an onion instead of a whole one to make things copacetic."
