Healthy Greek Chicken Salad

½ cup plain Greek yogurt

2 tbsp milk or your choice of milk substitute

3 tbsp lemon juice

1 tbsp Dijon mustard

½ tsp garlic powder

½ tsp onion powder

2 cups cooked chicken, shredded or diced

¾ cup dried cranberries

½ cup sliced almonds

½ cup celery, finely diced

½ cup green or red bell pepper, finely diced

¼ cup parsley, coarsely chopped

¼ cup dill (optional), chopped

Salt and pepper to taste

2 heads large Boston Bibb lettuce, washed and leaves separated

In a bowl, whisk together yogurt, milk, lemon juice, mustard, and garlic and onion powder. Fold in chicken, dried cranberries, almonds, celery, bell pepper, parsley, dill, salt and pepper to taste. 

So many tasty things.


Top each lettuce leaf with chicken salad and serve immediately. You can also enjoy chicken salad as a salad topper or in a sandwich.

I had the leftovers in a wrap, but it felt fancy to eat it by itself on lettuce like this for the first serving.


My Rating: 4/5 "This is a tangier chicken salad than I'm used to, but once you get used to that extra punch it's very nice. The craisins add just enough sweetness and the almonds make the texture interesting. I don't know that it's especially 'Greek,' but it is good!"
