Middle Eastern Mint Lemonade

Dancing in the Kitchen, p. 11

¼ c. sugar

2 ¼ c. water

¾ c. freshly squeezed lemon juice (from about 6 lemons)

½ c. loosely packed fresh mint leaves

Ice cubes

Lemon slices for garnish

Optional: 1 T. plain yogurt or 1 shot of vodka

To make the simple syrup, in a small saucepan, combine the sugar and ¼ c. water over medium heat. Bring the mixture to a boil and stir until the sugar has dissolved. Remove from the heat and let cool completely. Combine the simple syrup, remaining 2 c. water, lemon juice, and mint in a blender.

And the vodka, I guess? I didn't know when else it would go in.

Blend on high until the mint is liquified and the ingredients are combined. Depending on the strength of your blender, you may wish to strain the lemonade to remove any larger pieces of mint before serving. Taste and adjust with more lemon juice, mint, or sugar, if you wish. Serve over ice and garish with lemon slices.

Summery fun!

My Rating: 5/5 "Adored this. There's a little sweetness, and that's fun, but the mint is really the kicker here. It adds a wonderful smooth vibe that keeps this from being a candy drink. Give it a shot while the weather's hot!"
