Southwest Taco Dip

Mission

1 can (16 oz.) refried beans

3 medium avocados

2 Tbsp. lemon juice

¼ tsp. black pepper

1 ¼ cups sour cream

1 package taco season mix

1 small onion, chopped

3 tomatoes, chopped

½ cup sliced olives

16 oz. grated cheddar cheese

Tortilla chips

I thought the kind with the chilies in there would add some pizzazz, but you couldn't really taste them very much.

Spread refried beans on a large plate. Mash avocados in a separate bowl. Add lemon juice and pepper. Mix well and then spread over refried beans. Combine sour cream and taco seasoning mix. Spread over refried bean mixture. Top with tomatoes, onions, olives and cheese. 

Yummmmm


I used less than half the amount of recommended cheese and there was still SO MUCH CHEESE.

Serve with tortilla chips.

Dip for dinner? Don't mind if we do!

My Rating: 4/5 "The complexity of the lower layers makes this much more interesting than your average Tex-Mex layer dip. I especially enjoyed the avocado mixture! Get yourself a spicier taco seasoning if you want this to have more kick."
