Allan Houston's Buzzer Beater Baked Fish Fillets

 All Star Feast, p. 38

1 pound fish fillets

1 teaspoon lemon juice

1/8 teaspoon paprika

Salt and pepper to taste

1 tablespoon butter

1 tablespoon all-purpose flour

½ cup milk

¼ cup buttered bread crumbs

1 tablespoon snipped parsley

Preheat oven to 350 degrees F. Cut fillets into serving pieces and place in greased shallow baking pan. Sprinkle with lemon juice, paprika, salt and pepper. In saucepan, melt butter. Blend in flour and dash of salt and pepper. 

I used veggie butter and potato flour and they worked really well in the sauce.


Add milk and stir constantly until thickened and bubbly, about 1 minute. Pour sauce over fillets and sprinkle with bread crumbs. Bake at 350 degrees F. for 35 minutes or until golden brown. 

Maybe I went a little overboard with the bread crumbs.


Serve sprinkled with parsley.

I forgot the parsley. But I remembered to make red beans and rice, which I think is probably more important.

My Rating: 4/5 "Normally you think that the recipes in celebrity cookbooks are fake, but this seems like something that Allan Houston's mom could have fixed him when he was a kid. I don't know if salmon was the fish the recipe was intended for, but it worked well for me. I liked the crunch of the breadcrumbs and the substantial quality that the sauce added to the fish. Good stuff!"
