Southwest Black Bean Dip

Essential Everyday

1 (15 ounce) can black beans, rinsed and drained

1 ripe avocado, peeled and pitted

1 (14.5 ounce) can diced tomatoes with chilies, onion & cilantro, drained

2 cups shredded Monterey Jack cheese, divided

½ cup sour cream

Tortilla chips

Please beans and avocado in large bowl; using a potato masher, mash until semi-smooth.

It isn't as pretty after it's smashed.


Stir in tomatoes, 1 cup cheese and sour cream; salt to taste. Transfer to a 1-quart baking dish. 

It's a lot of good things together!


Top with remaining cheese.

Bake in a preheated 400F oven 20 minutes or until bubbly and cheese is melted.

It didn't come out looking quite how I expected.


Serve with tortilla chips.

Good tortilla chips make this even better!

My Rating: 3/5 "For all the good healthy things in this dip, it's fairly flavorless. The texture is satisfying and, you know, dippy, but that's about all it has going for it. Surely there are some spices that could zazz it up?"
