Peach Pudding

Dr.Gott’s No Flour, No Sugar Cookbook, p. 234

2 cups water

One 1.2-ounce package sugar-free vanilla pudding

One 0.3-ounce package sugar-free peach gelatin

1 ½ cups chopped fresh or sugar-free canned peaches

Ground cinnamon, for garnish

Place water in small pan. Add pudding and gelatin. Cook over medium heat until mixture reaches a boil. 

The mixture gets lumpy so I'd recommend getting a whisk involved.


Remove and cool. Stir in peaches. Cover and refrigerate until ready to serve. Serve in individual dessert dishes, garnished with dashes of cinnamon.

I took this to a friend's house and totes forgot the cinnamon.

My Rating: 4/5 "As I was tasting this early on in the setting process I thought it was gonna be syrupy and weird. Once it's been in the fridge for long enough, though, the texture is more streamlined and the flavors blend together seamlessly. It's a nice combination of natural and artificial sweetness."
