Hawaiian Pancake

Sunday Night Suppers, p. 30

4 oz. sharp Cheddar cheese (about 1 cup, grated)

Pineapple Topping

1 14-oz. can pineapple tidbits (about 1 cup, drained)

2 teaspoons lemon juice

1 teaspoon grated lemon peel

Pancake

2 tablespoons butter or margarine

1/3 cup sifted flour

¼ teaspoon salt

1 teaspoon lemon juice

3 eggs beaten

Set out a saucepan and a heavy 10- to 12-in. skillet.

Grate cheese and set aside.

For Pineapple Topping—drain pineapple, reserving sirup. Put the drained pineapple tidbits into the saucepan; stir in 1 tablespoon of the reserved pineapple sirup and lemon juice and lemon peel. Set mixture aside.

For Pancake—Put butter or margarine into the skillet. Put skillet into oven and heat oven to 450F. Remove skillet from oven when butter is melted and skillet is heated.

Meanwhile, sift together in a bowl and set aside flour and salt. Mix together ½ cup of reserved pineapple sirup and lemon juice. Add eggs and mix thoroughly. Combine egg mixture with the dry ingredients; beat until smooth. Pour batter into skillet.

Bake at 450F 12 min., or until pancake is delicately browned and edges draw away from sides of skillet.

When pancake is baking, heat the Pineapple Topping.

There's a lot going on, but it's easier than it sounds.


When pancake is done, remove from oven. Sprinkle about one half of the grated cheese evenly over pancake and carefully roll it up. Spoon Pineapple Topping over the rolled pancake. Sprinkle remaining cheese over the topping.

Jabba the Pancake.


Set temperature control of range at Broil.

Place skillet on broiler rack and put in broiler so that pancake is about 3 in. from source of heat. Broil until cheese is melted and lightly browned.

Remove pancake to a warm serving platter; serve immediately.

It's nice for two people - all you have to do is cut it in half!

My Rating: 4/5 "I really expected a combination of cheddar cheese and pineapple to be weird, and it was, but not like off-puttingly weird. The counterpoint of the two is a useful blend of sweet and salty that makes the flavor interesting. Nice comfort food vibe, too!"
