Peanut Butter Bisque

The Black Family Reunion Cookbook, p. 36

1/3 cup butter flavor Crisco

½ cup diced green bell pepper

½ cup diced celery

½ cup diced onion

3 tablespoons all-purpose flour

4 cups chicken broth

1 cup peanut butter

½ teaspoon paprika

½ teaspoon seasoned salt

½ teaspoon salt

½ teaspoon white pepper

1 cup half and half

1 cup chopped green onions

The flavorful foundation of the recipe.

Melt Butter Flavor Crisco in large saucepan. Add green pepper, celery and onion, Cook on medium heat until tender.

Spoon cooked vegetables into blender or food processor. Liquefy.

You end up with green foam. But it's tasty green foam!

Return to saucepan. Add flour. Stir until well blended. Add broth slowly. Cook and stir on medium heat until well blended and thickened. Stir in peanut butter, paprika, seasoned salt, salt and pepper. Mix well. Reduce heat to low. Stir in half and half. Do not boil.

What a pleasant-looking soup!

Serve garnished with green onions.

I might not use as many green onions as the recipe recommended if I made it again.

My Rating: 4/5 "There's a lot going on in this soup, and it's all tasty. It's complex, flavor-wise, but quite smooth and pleasant. The green onions got a little much but if you take then down a notch this is an incredible peanut butter soup."
