Spiced Sweet Potatoes

3 tablespoons coconut oil

½ teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon ground cumin

1 teaspoon cinnamon

1 pinch of ground chipotle pepper

3-4 peeled and cubed sweet potatoes

1 medium onion, diced

1 poblano pepper, seeded and diced

Preheat the oven to 400F.

Melt the coconut oil in a small bowl and whisk in the spices.

Put the sweet potatoes, onions, and pepper into a large bowel [sic]. 

I hope this was a large enough bowel.


Drizzle the oil mixture over the vegetables and toss to blend well.

Spread evenly in a large glass baking dish and bake for 40 minutes or until the potatoes start to brown. 

Boom!


Serve immediately.

My Rating: 4/5 "I was pleasantly surprised with these potatoes, especially in their capacity to be both healthy and tasty. Loved the combination of the cinnamon and coconut oil. The onions and peppers keep the flavor from being too naturally sweety-sweet. A great side dish for something less flavorful!"
