Goddess of the Sea

Coldwell Banker Tastefully Yours, p. 61

1 pound fish fillets, defrosted

2 carrots, diced

2 stalks celery, diced

½ lemon, sliced

1-8 ounce bottle Green Goddess salad dressing

1 medium onion, sliced thin

Parsley

Mix carrots, celery, and onion slices with half of the dressing.

Green Goddess is the best.

Bake in casserole dish (rectangular or oval looks nicest) at 325 degrees until they have lost their crispness, approximately 15 minutes. Remove from oven. Arrange fish so that half of the vegetable mix is over and half is under. Pour remainder of dressing over fish.

MORE Green Goddess? Don't mind if I do!

Decorate with lemon slices and parsley. Bake at 325 degrees until fish flakes at the touch of a fork, 8-10 minutes. Dressing will change in taste and consistency.

Fishy beauty!

Served with some nice Mexican Street Corn Salad from the Ken's deli.

My Rating: 5/5 "This combines a lot of delicious things in an even more delicious way. The dressing ties everything together, but the fish and the veggies still shine through. Use a mild-flavored fish and you can't go wrong with this."
