Pastry-Wrapped Baked Brie with Honey and Almonds

1 sheet puff pastry, defrosted and rolled out to approximately 12 x 12 inches

12 oz. wheel of brie cheese

3 Tbsp. honey, divided

1/3 cup sliced almonds, divided

1 egg, beaten

1 Tbsp. water

Crackers or crostini, for serving

Preheat oven to 400F.

On a baking sheet lined with parchment paper, lay the puff pastry out and place the wheel of brie in the center. Top with 2 Tbsp. of honey and half the sliced almonds.

In a small bowl, combine beaten egg and 1 Tbsp. water. Gently fold the corners of the puff pastry up one at a time, brushing the dough with egg wash to hold the folds together. Trim any excess dough and brush the sides and top with remaining egg wash.

So tidy!


Bake the brie in a 400F oven for 10 minutes.

Using a pot holder or oven mitt, carefully pull the oven rack out of the oven about halfway. Don’t remove the baking sheet from the oven, but quickly drizzle the remaining Tbsp. of honey on top and sprinkle the remaining almonds on top. Slide the oven rack with the baking sheet on it back into the oven and continue baking for another 10 minutes. Watch carefully to ensure the almonds don’t burn. Remove baking sheet with the brie.

Transfer to serving dish, allow to cook for a few minutes and serve with crackers or crostini.

We weren't sure how we were supposed to get the top off of it to get to the brie so we hacked at it with a fork before we got to the crackers.
