Fifty from the Trail, p. 45

1 12-inch pizza crust

½ cup thick and chunky salsa

1 cup rinsed and drained canned black beans

5 each, thin green and red bell pepper rings

1/3 cup thinly sliced red or green onions

1 or 2 jalapeno peppers, sliced, seeds and stems removed

2 cups shredded cheddar or Jack cheese

2 tsp. Tex-Mex seasoning

Gotta love food with color variety.


Place crust on large baking sheet.

Spread salsa evenly over crust. Top with beans, bell pepper rings, onions, jalapeno peppers and cheese. Sprinkle Tex-Mex seasoning evenly over cheese. 

Taco seasoning works just fine.


Bake in a 450F oven for about 12 minutes or until crust is golden brown and cheese is melted. Cut into slices and serve immediately.

We're all just going to agree to pretend that I meant for the crust to come out looking like this.

My Rating: 4/5 "Lots of pizzazz in this recipe! I can never quite wrap my mind around beans on pizza but in this case they fit the flavor profile well and weren't distracting. It's not nuclear-hot even with the jalapenos, but it definitely leaves an impression!"
